George’s Deep Dish in Edgewater is famous for its sourdough-based take on Chicago’s classic. Unlike the typical heavy pie, its 48-hour fermented crust is light, airy, and features a caramelized Pecorino Romano edge (reminiscent of Detroit-style).
Founder George Bumbaris built the room around that dough obsession: a deep dish that keeps the structure and drama, then cuts some of the brick-weight heaviness. Pepperoni cups, sausage, basil, that browned cheese ring. Edgewater noticed.
