Yukon’s sourdough starter was born during the Klondike Gold Rush — 125 years old and still working in the Las Vegas Arts District. Alex White, a World Pizza Champion, started it as a backyard pop-up; now the neighborhood spot turns out wood-fired Neapolitan pies with a distinctly tangy, airy crust, plus smashburgers and a deep vegan bench.
